Abstract
Kakao merupakan komoditi yang digunakan untuk membuat produk-produk olahan cokelat yang disukai oleh masyarakat. Oleh karena itu industri cokelat menuntut mutu biji kakao yang benar-benar baik untuk dijadikan bahan baku untuk pembuatan berbagai produk olahan cokelat yang bermutu tinggi. Mutu biji cokelat yang baik bisa dihasilkan bila dalam proses pengolahannya menggunakan teknologi yang baik, varietas kakao yang digunakan, kondisi tanah, lama fermentasi. PT. Perkebunan Nusantara X (Persero) merupakan Badan Usaha Milik Negara (BUMN) sektor Perkebunan yang salah satu jenis komoditi yang diusahakannya yaitu kakao. Proses produksi yang terjadi di perkebunan tersebut diawali dari persiapan lahan, pembuatan bibit, penanaman, pemeliharaan, pemanenan, kemudian dilanjutkan ke fermentasi, pengeringan (matahari, cocoa dryer) serta sortasi dan pengemasan.
