Abstract

The production of light processed foods has never experienced a decrease in consumer interest, in Magersari subdistrict, Mojokerto City, there are several small and medium enterprises (SNIEs) that produce cheerful food (kerupuk and kemplang), which are partners in this community partnership program, the first partner of SMEs cassava crackers "Cassava", and the second partner of SME Kemplang Cracker "Haka Bakery". The production process can produce up to 300 kg of processing per day but in the final processing, drying (drying) is required only depending on the weather (sunlight), so that the current production can range from 50 to 75 Kg per day. To improve the production of the SME, the prioritized way is to make a cracker dryer, using a closed room, heating using hot air exhaled, with a production scale of 50 kg of wet cracker once process, drying process (late humidity 15%) during approximately I hour 30 minutes, fuel used LpG gas. In general, production and management are well managed, with the help of brand permits, nutrition licenses, legal trade administration, and product exhibitions up to the national level, facilitated by Mojokerto municipal government, so that these SMEs can develop marketing in the area around Kediri, Tulungagung, Surabaya, to the outer islands. Therefore, the priority of activities by making equipment that solves the problem of drying processed food crackers, which can be done at any time, with cleanliness and controlled drought standards, and the efficient use of fuel (LPG gas). So the production will increase to 300 Kg of processed material.
