Abstract

Minyak kelapa sawit adalah salah satu dari empat minyak nabati utama (kelapa sawit, kedelai, rapeseed dan bunga matahari), yang bersama-sama menyumbang lebih dari 80% dari total pasar (luar negeri) minyak nabati dan lemak. Buah sawit adalah sumber bahan baku Crude Palm Oil (CPO) dan Palm Kernel Oil (PKO). CPO dihasilkan dari daging buah sawit, sedangkan PKO dihasilkan dari inti buahnya. PT Rea Kaltim Plantations adalah perusahaan perkebunan kelapa sawit yang telah beroperasi sejak tahun 1994. Pabrik Perdana Oil Mill (POM) PT Rea Kaltim Plantation memproses CPO dengan kualitas yang baik serta didukung oleh sumber daya manusia yang besar. Proses utama pengolahan CPO antara lain: penimbangan, grading, perebusan, threshing, pressing, clarification, dan penyimpanan. PT Rea Kaltim Plantation dipilih sebagai tempat pelaksanaan PKIPP dikarenakan perusahaan ini merupakan penghasil komoditi pertanian di bidang perkebunan kelapa sawit yang merupakan komoditas unggulan dan utama serta yang terbesar di Indonesia. Tujuan dari Praktek Kerja Industri Pengolahan Pangan ini adalah untuk mempelajari dan memahami penerapan teori yang telah diperoleh selama perkuliahan serta mengetahui, melatih, memahami secara langsung tahapan proses pengolahan CPO, terutama pada proses pengolahan kelapa sawit menjadi CPO, pengendalian mutu CPO, sanitasi, pengolahan limbah dan manajemen perusahaan di PT Rea Kaltim Plantations.
