Abstract

Wafer cream is a product with a blend of the characteristics of crunchy, creamy and easily melted in the mouth is favored by the people as a snack food (snack). Cream wafer quality is affected by water content, softness of cream, the thickness of opaque and ketengikan that may occur. The effect on the quality of the cream wafer should be controlled properly and continuously carried out controls, especially for production on a large (3.900kg/day plant capacity) to ensure customer satisfaction and meet industry standards and regulations. Control and control can be done well by the Quality Assurance unit. Quality Assurance Section is responsible for quality assurance management procedures, ranging from quality raw materials, production processes, storage, testing, distribution, until the product is in the hands of consumers. Quality assurance also has a cycle of a very important role in determining the specifications or quality standards of raw materials, processes and products, manage the activities of supervision and testing of raw materials, production processes, and products produced cream wafers, held a follow-up investigation and determine over the cause - the cause of errors during processing, to evaluate and determine corrective actions for errors that occur during wafer processing cream, find out how consumer tastes toward wafer cream products produced and circulated in the community, handle complaints and grievances that arise from the community through customer service facilities, and set a standard specification or a new quality of raw materials, production processes, and products where appropriate.
