Abstract

Ikan merupakan hasil hewani yang berasal dari laut. Di indonesia, merupakan salah satu penghasil ikan terbesar di dunia karena wilayah indonesia yang sebagian besar terdiri dari lautan. CV. Sari Laut Jayamerupakan salah satu industripengolahan ikan dalam kaleng yang cukup luas jangkauan distribusinya sampai ke luar negri. Perusahaan ini berlokasi di daerah pesisir dekat dengan perkampungan nelayan, Jalan Sampangan B1/A, Muncar-Banyuwangi. Struktur organisasi tertinggi dijabat oleh General Manager yang turun secara linier pada bagian-bagian dibawahnya.CV. Sari Laut Jaya memiliki hasil produksi utama berupa pengalengan ikan sarden dengan merek Biltan, Intan dan Daikin. Bahan baku utama berupa ikan sarden atau ikan lemuru yang diperoleh langsung dari hasil laut dekat lokasi pabrik pengalengan ikan dan bahan baku tambahan dalam pengalengan ikan berupa saus sambal atau saus tomat yang dicampurkan bersama ikan dalam kaleng. Proses pengolahan meliputi sortasi ikan, tahap pre-cooking, tahap decanting, tahap sterilisasi dan proses pengalengan ikan. Pengemas yang digunakan adalah kaleng yang sudah disterilisasi dan terbebas dari bakteri kontaminan. Pengendalian mutu dilakukan dari penerimaan bahan baku, proses produksi hingga produk jadi yang siap dipasarkan.
