Abstract

PT. Ajinomoto Indonesia merupakan perusahaan yang bergerak dalam pembuatan Monosodium Glutamat (MSG) dimana statusnya termasuk dalam perusahaan Penanaman Modal Asing (PMA). Monosodium Glutamat (MSG) merupakan salah satu produk Bahan Tambahan Pangan yang berfungsi sebagai penguat rasa (flavor enhancer). PT. Ajinomoto Indonesia menggunakan cara mikrobiologis yaitu fermentasi menggunakan bakteri Brevibacterium lactofermentum dengan menggunakan bahan utama dari cane molasses (tetes tebu). Fermentasi ini bertujuan untuk mengubah glukosa menjadi asam glutamat. Pada proses pembuatan MSG terdapat 5 unit proses utama yaitu dekalsifikasi, sakarifikasi, fermentasi, isolasi dan purifikasi. PT. Ajinomoto Indonesia menerapkan sanitasi mulai dari bahan baku hingga menjadi produk akhir, mesin dan alat yang digunakan serta pekerja. PT. Ajinomoto Indonesia juga telah lulus dan melaksanakan sistem manajemen keamanan mutu seperti ISO dan lain sebagainya. Produk samping yang dihasilkan oleh PT. Ajinomoto Indonesia berupa limbah yang didaur ulang menjadi produk yang bernilai jual dan mengalami proses sesuai standar Ajinomoto Co. Inc. PT. Ajinomoto Indonesia berhasil meraih penghargaan Zero Emission pada tahun 2009 serta menjadi satu-satunya grup perusahaan Ajinomoto Global yang meraih penghargaan tersebut.
