Abstract

PT. Charoen Pokphand Indonesia Plant Berbek yang berlokasi di Jl. Berbek Industri 1/No. 24, Kawasan SIER, Berbek, Waru, Sidoarjo, Jawa Timur merupakan salah satu perusahaan yang bergerak di industri pangan yang mengolah hasil ternak menjadi sosis siap santap dengan merek “Champ”. Sosis siap santap yang dihasilkan oleh perusahaan ini memiliki dua varian rasa yaitu; ayam original dan sapi barbeque. Sosis siap santap (ready to eat) merupakan produk olahan hewani yang dapat langsung dikonsumsi, tidak membutuhkan proses pemasakan lagi. Sosis secara umum merupakan hasil olahan lanjutan dari daging hewan (terutama sapi dan ayam) yang memiliki kandungan protein dan kadar air yang tinggi. Kandungan protein dan kadar air yang tinggi pada daging sapi dan ayam merupakan media yang tepat untuk pertumbuhan mikroba, khususnya pertumbuhan bakteri dan fungi sehingga diperlukan pengawasan mutu produk sosis siap santap. Pengawasan mutu yang dilakukan oleh PT. Charoen Pokphand Indonesia sangat ketat. Pengawasan mutu dilakukan pada tiga bagian yaitu mulai dari pengawasan mutu bahan baku, selama proses pengolahan dan produk jadi. Pengawasan mutu bertujuan untuk meminimalisir kemungkinan kontaminasi yang dapat terjadi pada produk. Urutan proses pembuatan sosis siap santap “Champ” meliputi penerimaan bahan baku, pembuatan flake ice, pembuatan gel, pembuatan adonan premix, penggilingan daging, pencampuran, emulsifikasi, pendeteksian logam, penampungan adonan, pengisian, pengujian kemasan, penyusunan, pemasakan, pencucian, penimbangan, karantina dan pengemasan. Bagi penulis, proses pembuatan sosis siap santap merk “Champ” di PT. Charoen Pokphand Indonesia Plant Berbek telah memenuhi aspek higienitas selain itu, semua bahan dan alat yang digunakan dalam proses pembuatan sosis siap santap merk “Champ” merupakan bahan dan alat yang bermutu tinggi
