Abstract

Kerupuk merupakan produk makanan kering yang terbuat dari tepung tapioka dengan atau tanpa penambahan bahan makanan lain yang diizinkan dan perlu adanya proses penggorengan sebelum dikonsumsi. PT. Sekar Laut merupakan salah satu perusahaan yang memproduksi kerupuk udang sejak tahun 1960, sehingga kami memilih PT. Sekar Laut sebagai tempat Praktek Kerja Industri Pengolahan Pangan (PKIPP) yang dapat memberikan pengalaman yang bermanfaat. PKIPP di PT. Sekar Laut berlangsung pada tanggal 8 Januari hingga 17 Januari 2018. PT. Sekar Laut terletak di Jalan Jenggolo II/17, Sidoarjo. PT. Sekar Laut merupakan suatu perusahaan berbentuk perseroan terbatas dengan struktur organsasi garis dan staf. Jumlah karyawan yang bekerja di PT. Sekar Laut sebanyak 585 orang. Proses produksi di PT. Sekar Laut dilakukan secara kontinyu selama 24 jam yang terbagi menjadi 3 shift dengan jam kerja 8 jam sehari untuk setiap shift. Pada hari Minggu proses produksi tidak berlangsung. PT. Sekar Laut memproduksi 21 jenis kerupuk udang yang dibedakan berdasarkan formulasi (rasio antara bubur udang dan tepung tapioka). Pengawasan mutu di PT. Sekar Laut dilakukan terhadap bahan baku, bahan tambahan, bahan pengemas, dan produk akhir. Sistem sanitasi di PT. Sekar Laut dilakukan dengan baik agar produk yang dihasilkan tidak mengalami kontaminasi. Sanitasi di PT. Sekar Laut diterapkan pada karyawan, lingkungan kerja, dan lingkungan disekitar perusahaan. Aplikasi HACCP di pabrik diterapkan mulai dari penerimaan bahan baku hingga pemasaran produk. Hal yang paling penting yang harus diperhatikan oleh PT. Sekar Laut Tbk adalah mengenai konsumsi sumber daya yang tidak dikontrol, sebaiknya PT Sekar Laut Tbk melakukan peremajaan alat-alat yang mengkonsumsi daya yang besar, dengan alat yang rendah konsumsi sumber daya dan ramah lingkungan.
