Abstract

Persediaan roti yang berlebihan akan menimbulkan roti sisa dan kerugian. Sebaliknya, apabila persediaan roti sedikit maka perusahaan tidak dapat memenuhi permintaan pasar dan kehilangan kesempatan mendapat keuntungan. Sehingga perlu menentukan jumlah produksi yang tepat agar dapat memaksimalkan keuntungan yaitu menggunakan newsvendor model, karena permintaan datang sebelum produksi dan produksi hanya dilakukan satu kali sehari. Hasil dari pengolahan dan analisis data menggunakan newsvendor model adalah dalam satu minggu industri XYZ akan mendapatkan keuntungan sebesar Rp 26.392.378 dengan memproduksi 7616 roti jika HPP 60%, sedangkan jika HPP 65% mendapatkan keuntungan Rp 22.818.949 dengan memproduksi 7541 roti, jika HPP 70% mendapatkan keuntungan Rp 19.313.069 dengan memproduksi 7419 roti, jika HPP 75% mendapatkan keuntungan Rp 15.791.523 dengan memproduksi roti 7277 roti, dan jika HPP 80% industri roti XYZ akan mendapatkan keuntungan sebesar Rp 12.547.945 dengan memproduksi roti 7133 roti.
