Abstract

Bakso adalah salah satu makanan yang banyak digemari oleh banyak kalangan mulai dari anak- anak hingga orang dewasa. Bakso dikonsumsi sebagai pelengkap lauk atau dapat juga langsung dimakan sebagai makanan utama. PT. Aromaduta Rasaprima merupakan salah satu perusahaan yang memproduksi bakso ayam sejak tahun 1980, sehingga saya memilih PT. Aromaduta Rasaprima sebagai tempat Praktek Kerja Industri Pengolahan Pangan (PKIPP) yang dapat memberikan pengalaman yang bermanfaat. PKIPP di PT. Aromaduta Rasaprima berlangsung pada tanggal 10 Juli hingga 4 Agustus 2018. PT. Aromaduta Rasaprima terletak di Jalan By Pass Ngurah Rai No.555x, Pesanggaran, Denpasar. PT. Aromaduta Rasaprima merupakan suatu perusahaan dengan struktur organsasi garis dan staf. Jumlah karyawan yang bekerja di PT. Aromaduta Rasaprima sebanyak 365 orang. Proses produksi di PT. Aromaduta Rasaprima dilakukan secara kontinyu selama 8 jam kerja. Pengawasan mutu di PT. Aromaduta Rasaprima dilakukan terhadap bahan baku dan bahan tambahan, proses produksi, serta sebelum distribusi. Sistem sanitasi di PT. Aromaduta Rasaprima dilakukan dengan baik agar produk yang dihasilkan tidak mengalami kontaminasi. Sanitasi di PT. Aromaduta Rasaprima diterapkan pada bahan baku, peralatan, ruang pengolahan dan penyimpanan produk serta pekerja. Aplikasi HACCP di pabrik diterapkan mulai dari penerimaan bahan baku hingga pemasaran produk.
