Abstract

Bakso ikan adalah produk olahan daging ikan dan memiliki tekstur kenyal. PT. Sekar Bumi Tbk merupakan industri yang bergerak dalam pengolahan value added product, salah satunya adalah bakso ikan “Bumifood”. PT. Sekar Bumi Tbk telah memperoleh berbagai sertifikasi keamanan pangan dan telah mengekspor bakso ikan “Bumifood” ke Singapura dan Korea Selatan, sehingga kami memilih PT. Sekar Bumi Tbk sebagai tempat Praktek Kerja Industri Pengolahan Pangan (PKIPP) yang dapat memberikan pengalaman yang bermanfaat. PKIPP di PT. Sekar Bumi Tbk berlangsung pada tanggal 20 Desember 2019 hingga 10 Januari 2020. PT. Sekar Bumi Tbk terletak di Jalan Jenggolo II/17, Pucang, Kecamatan Sidoarjo, Kabupaten Sidoarjo, Jawa Timur. Tata letak PT. Sekar Bumi Tbk berupa fixed position layout. PT. Sekar Bumi Tbk menerapkan struktur organisasi berupa organisasi garis dan staf. Jumlah tenaga kerja di PT. Sekar Bumi Tbk sebanyak 350 orang. Bahan baku yang digunakan dalam pembuatan bakso ikan adalah surimi dan tapioka, bahan pembantu yang digunakan adalah es batu dan bumbu, dan bahan tambahan pangan yang digunakan adalah monosodium glutamat dan sekuestran fosfat. Beberapa tahapan proses pengolahan bakso ikan meliputi thawing, slicing, pencampuran, pencetakan, perebusan, pengemasan, dan penyimpanan. Sanitasi di PT. Sekar Bumi Tbk diterapkan pada bahan baku dan bahan pembantu, mesin dan peralatan, pekerja, lingkungan produksi, dan lingkungan di sekitar perusahaan. Pengendalian mutu dilakukan terhadap bahan baku dan bahan pembantu, proses produksi, dan produk akhir. Pengolahan limbah hanya dilakukan untuk limbah cair hasil produksi bakso ikan.
