Abstract

Buah kelapa banyak dimanfaatkan untuk berbagai kebutuhan, salah satunya untuk minyak kelapa. Dalam dunia industri, daging kelapa merupakan bahan utama pembuatan virgin coconut oil. Dalam penelitian ini dibahas mengenai proses pembuatan virgin coconut oil dengan metode sentrifugasi. Dilakukan proses pembuatan virgin coconut oil dengan memberikan empat perlakuan. Perlakuan yang dilakukan adalah menkombinasikan volume air 0 L dan 4,5 L dan waktu gaya sentifugal selama 45 menit dan 60 menit. Perlakuan waktu gaya sentrifugal 60 dan dengan penambahan air 4,5 L mendapatkan kandungan asam laurat sebesar 28,32%. Kandungan asam laurat yang dihasilkan masih belum mencukupi standar APCC yang memiliki standar sebesar 48,40%-52,84%.
