Abstract

Nugget ayam merupakan produk olahan ayam yang dibuat dari campuran daging ayam dengan penambahan bahan tambahan pangan lain, dicetak (kukus cetak atau beku cetak), diberi bahan pelapis, dan digoreng atau dibekukan. Nugget “Chirotter” merupakan produk nugget ayam frozen dengan penambahan wortel dan jamur tiram. Tujuan penambahan wortel dan jamur tiram tersebut adalah meningkatkan kandungan serat pada nugget dan dapat menjadi salah satu alternatif untuk meningkatkan konsumsi sayur pada masyarakat, terutama anak-anak dan remaja usia sekolah yang tidak suka mengkonsumsi sayuran. Nugget “Chirotter” diproduksi dalam skala rumah tangga dengan 1 pimpinan dan 2 karyawan produksi. Kapasitas produksi nugget “Chirotter” adalah 50 kemasan @ 300 g per hari. Proses produksi dilakukan di Perumahan Puri Lidah Kulon Indah B23 Kec. Lakarsantri, Kel. Lidah Kulon, Surabaya. Nugget “Chirotter” dikemas menggunakan kemasan thin wall yang bervolume 750 ml dan dijual dengan harga Rp 37.000/kemasan. Penjualan nugget “Chirotter” dilakukan melalui media sosial, seperti WhatsApp, LINE, dan Instagram. Hasil analisa ekonomi dari nugget “Chirotter” menunjukkan bahwa ROR setelah pajak adalah 67,21 %, MARR 12%, POT setelah pajak adalah 17 bulan 21 hari, dan BEP sebesar 58,41%.
